Argentina, Austria, the Czech Republic, Denmark, Finland, Germany, Ireland, Israel, Italy, Luxembourg, Norway, Poland, Sweden, Switzerland, the Netherlands, and the United Kingdom all prohibit foie gras. The State of California passed legislation to ban all sale and production by 2012. Oregon, Illinois and New York are considering similar legislation. Currently, California and New York are the only US states with foie gras industries.

France is the world's leading producer of foie gras, turning out some 18,450 tonnes a year, or some 75 percent of the world total estimated at 23,500 tonnes. In France, it is a traditional dish for festive occasions, particularly around Christmas and the New Year.
